Stove

  • Mussel (Dutch: Mossel) is a Dutch delicacy which can be cooked in many different ways. Here the traditional method is used. Clean the mussels by giving them a nice cold water bath. Rinse the mussels so they no longer produce sand. The reason using cold water is the mussels will close if they were open. Those who don't close are probably already death and should not be consumed at all. Close mussels are alright, very heavy mussels are not ok (Sand-mussels or slick-mussels). Broken mussels are also not ok.
Create a bed of vegetables (union (ui), carrot (wortel), celery (selderij) in a wide high pan. Add some water or better white wine (1/2 cm). Place the pan on a high fire with closed lid/cover. When the pan is boiling let it boil for 5 minutes. Add the mussels on top of the vegetables and with closed lid/cover on the highest fire of the stove until it boils again. Then shake all and place it on the stove again until the mussels are open.
Serve with baguettes with garlic sauce and fresh salad.
